Several of my favorite cookbooks are by Yotam Ottolenghi and the "Plenty" cookbook has a great recipe for tomato soup that includes fennel. The Chickpea, tomato and bread soup recipe can be found at this link. It calls for 1 can of italian plum tomatoes but I've also substitute fresh tomatoes when I have them.
