This was delicious. I just ate the little one! Due to laziness & not having one of my butter crusts freezer, used Pillsbury which was just fine (& made a 9" tart + little one). I actually had Gruyère cheese --but think Swiss would work --would make quiche a bit more like a Quiche Lorraine.
