Hello all! Apple season is upon us and I thought I would share this since Rob shared his canned apple pie filling. I usually get a bushel plus of apples to can applesauce and make ~ a dozen pies using the recipe in the link below. I do the "freeze for later" and give several away. Nothing like grabbing a pie from freezer during holidays -- or middle of Feb! I also did one using the smoker --following the recipe for baking the frozen pie to a tee. Bourbon brown sugar pellets. Was fabulous! If you have the freezer space, I highly recommend! https://anoregoncottage.com/crumb-topped-apple-pie-bake-or-freeze/(https://anoregoncottage.com/crumb-topped-apple-pie-bake-or-freeze/)

Happy Labor Day weekend everyone! Made this soup with some of the poblanos this week. Really good--reminiscent of Chicken Tortilla Soup. I sort of did a half recipe--but used 3 poblanos + a green chile & jalapeño. Also added onion which I sautéed with the red pepper in the butter before adding the flour. I am actually gonna can a couple jars of poblanos with a Chile and jalapeño today to be able to whip this up quickly in the winter! Also, if you are like me and use a lot of online recipes --check out the CopyMeThat app. Allows you to easily take any recipe buried in an article and basically "strip" it out. Best app.. https://dinnerthendessert.com/chicken-poblano-soup/(https://dinnerthendessert.com/chicken-poblano-soup/)

Ok all --if you are like me and have never used fennel this recipe rocks the house! Just finished eating it and OMG! We get 2 lamb from a local farmer so I made a half recipe with 2# of the stewing meat. Then I followed the recipe to a tee (except didn't make the croutons). Served on couscous. Tasting while cooking was delicious--but adding the orange zest and juice at end took it to a new level! If you make it --do not skip or substitute the orange! This was delicious. I just ate the little one! Due to laziness & not having one of my butter crusts freezer, used Pillsbury which was just fine (& made a 9" tart + little one). I actually had Gruyère cheese --but think Swiss would work --would make quiche a bit more like a Quiche Lorraine. https://www.oliviascuisine.com/gruyere-bacon-leek-quiche/#llc_comments
